The Tabladillo Mission Statement

In the mid-20th century, Laureano María had the ambition to get ahead. Get ahead for his family, in his work, in getting things done and keeping his word, getting ahead with his life.

Those were not times of plenty. Life had not given him land but it had given him the virtue of working hard, tenacity, sacrifice and resilience. And life had also placed him in Segovia. These values were inherited by his son Fernando, who, like Laureano, kept moving forward. Always trying to get ahead.

From taking the bus to owning his own car. From distributing what the countryside, livestock breeders and farmers sold him to being a livestock breeder himself. From going into Segovia to sell, to doing it throughout Spain. Looking ahead and doing things sooner, to get ahead of whatever might happen, as Laureano had taught Fernando.

Thinking ahead, good sense, being with the family and working together pays off.

The times may be different, but these values remain the same.

Fernando thought… now is the time to keep moving forward, like he had always done.

With a unique product: the suckling pig. A product of the land of Segovia. A product adored by all for its flavour, its exoticism, its softness and its crunchiness.

And again, the family. Fernando dreamed that his children would make this legacy even greater. And they did just that. The third generation wondered:

How can we keep moving forward?

How can we reach all the tables in the world with a product that everyone likes?

How can we bring this Segovian gastronomic gem to the entire world?

The answer was clear: By making it easy. By doing it before anyone else. And by explaining it to the world. Tradition, innovation, anticipating new tastes and products, and adding value to a unique product making it affordable for everyone: Segovia suckling pig.

And doing it with the legitimacy that in Segovia, Tabladillo is without a doubt THE suckling pig. There has not been another before it and there is no other like it.

That was Fernando’s dream, and now it has come true.

1967

Laureano María begins selling his own livestock and vegetables to restaurants in Segovia.

1973

Fernando, Laureano’s youngest son, joins the sales team at the age of 16 alongside his father. Thanks to their business vision, they focus their efforts on selling Segovia suckling pig.

1989

This was when the company started to expand, beginning with sales in the Legazpi market in Madrid and expanding its horizons nationally.

1996

Founding of the company Fernando María S.L.

2003

David de María, the current CEO, joins the company, representing a major shift towards a modern and international company.

2005

Creation of Carnicas Tabladillo S.L.

2006

The company Segonillo FM S.L. begins operations.

2008

We inaugurate the facilities where production takes place today. This is our own slaughterhouse that has become a benchmark in the province.

2011

Israel de María joins us as Director of Administration and Finance. From this moment on, there is a change in the company’s visual image.

2013

Esther de María joins as Purchasing Director, standardising our own and exclusive farms.

2014

We are certified by IFS, which is another step in the company’s development. We start working with large supermarkets.

2015

Between 2014 and 2015, the R&D, export and marketing departments are created.

2016

We launch AL HORNO Y PUNTO, a new and quick solution to make a five-star quality suckling pig at home.

2017

We obtained the ITQI quality seal with 3* for our product AL HORNO Y PUNTO and the GREAT TASTE award with 2* for AL HORNO Y PUNTO and 1* for our guaranteed suckling pig and the roast suckling pig joint.

The Ministry of Agriculture grants us the ALIMENTOS DE ESPAÑA FOOD AWARD.

2018

Launch of our new top quality range, LA QUINTA DE TABLADILLO www.laquintadetabladillo.com

2020

Our first e-commerce is set up. We expand our facilities, gaining greater production and storage capacity to serve our customers anywhere in the world in record time.

2021

Launch of Tapas in the top quality range of pre-roasts.

2022

Launch of La Quinta de Tabladillo SMART, our quarter suckling pig and roast suckling pig joint that do not need refrigeration, winning awards for them at the Alimentaria Trade Fair.

2023

Rebranding of the Tabladillo and La Quinta brands, unifying and focusing on the mother brand Tabladillo El Cochinillo.
