The Segovia suckling pig guarantee mark is the surest way to enjoy a Segovia suckling pig. If you want to know how to do it yourself at home, follow these recommendations or watch the video recipe below.
- Salt the suckling pig to taste, always along the inside.
- Place wooden sticks on the bottom of the oven tray so the skin doesn’t stick.
- Add plenty of water until the wooden sticks are completely immersed.
- Preheat the oven for 15 minutes to 180ºC.
- Place the suckling pig in the oven with the skin facing downwards. 180ºC for 1 hour and a half.
- Remove the suckling pig, turn it over and put it back in for another hour and a half with the skin facing upwards.
- Lastly, strain the gravy and serve it on the side. Never pour the gravy over the suckling pig, to avoid softening the skin.
It is a whole suckling pig 4-5 to 5-6 kg in weight backed by the local guarantee mark.
Recommended for eight people.
Shelf life 21 days when fresh (from labelling) and 2 years when frozen.
