To cook a quarter of fresh suckling pig, the oven will be one of the best options, to savor its crispy and golden crust of the traditional Segovian roast.
- Roast the suckling pig to taste always on the inside.
- Place some wooden shovels at the bottom of the oven tray to prevent the skin from sticking.
- Add water generously until the wooden paddles are completely covered.
- Preheat the oven for about 15 minutes at 180ºC.
- Place the suckling pig in the oven with the skin side down at 180ºC for 1 hour and a half.
- Remove the suckling pig, turn it over and put it in the oven with the skin side up for another 1 hour and a half.
- Finally, strain the sauce and serve it on the side. Never on top of the suckling pig so that the skin does not soften.
It is a piece of 1-1,5kg in fresh vacuum packed.
Recommended for 3 persons.
