How to cook Tabladillo roast suckling pig joint

To make this carré of pre-roasted suckling pig, follow these 3 steps:

  1. Remove from the refrigerator 30 minutes before baking.
  2. Open the plastic package and place the piece of suckling pig on a roasting tray with a little water at the bottom.
  3. Place in the oven pre-heated to 220ºC and bake for approximately 50 minutes. Boneless, meltingly tender inside and super crunchy outside, the perfect description of Tabladillo’s “Roti de Cochinillo” roast suckling pig joint, the dish all the great chefs turn to when it comes to delighting their guests.

Use the oven with dual cook mode to ensure balanced baking throughout the cut. If needed, brown for a few more minutes to taste.

You can also cook it in an air fryer by following these steps:

  • Preheat the fryer to 200ºC.
  • Open the bag, remove the roast suckling pig joint and place it on the tray. You can brush the skin with olive oil to make the skin crispier.

Roast for 30 minutes with the fryer at 200ºC. If desired, cook for a few more minutes until the skin is golden brown to taste.
